Angelika Sofia Bolkvadze

Angelika holds a MSc from Tallinn University of Technology, specializing in food technology and product development. She is a researcher in an Shroomwell R&D team, leading projects focused on optimizing extraction processes and enhancing bioactive compound production from functional mushrooms. Alongside her research work, she was actively involved in developing mycoprotein-based meat alternatives, including commercially available products. Her experience spans mycology, food technology, and applied research, with a strong focus on innovation in alternative proteins. Currently, she is working in Taltech on DigiBio and Bioconnect projects as well as conducting group´s overall outreach and communication.
